Rib Chops are individual chops cut from the Rib primal, which encompasses a series of six ribs located between the shoulder and the loin and known as a Rack when still intact. Meat from this primal is the most tender on the lamb and mild in flavor and does best when cooked hot and quick with dry heat, like grilling or roasting in the oven.
